Refined coconut oil is produced by pressing dried coconut meat, known as copra, and then undergoing a refining process before it is suitable for human consumption. This process removes much of the natural coconut flavor along with some of its micronutrients. Because copra is a more economical raw material, refined coconut oil is generally more affordable than virgin coconut oil.
Coconut oil is naturally rich in saturated fatty acids, particularly lauric acid (around 50%) and myristic acid (about 20%). These fatty acids belong to a group called medium-chain triglycerides (MCTs), which are shorter than the saturated fats typically found in vegetable oils and animal fats, such as palmitic and stearic acid. Thanks to these MCTs, coconut oil offers a more favorable health profile than its high saturated fat content might initially suggest.
